When opening Wild Rabbit Café, Chef Laura Hannan drew on her 8 years of successful farmer relationships that supported her popular mobile vegetarian catering business. Building on that success, Chef Laura’s commitment to local produce continues to be unwavering. Farmers are acknowledged by name clearly on her menu- there are more than 8 local farms she currently supports–and you will find a “Farmers Bounty” area in this café where patrons can purchase fresh local farm produce. You will see this local produce highlighted on her social media pages, menus, and the counter top displays in her shop. The mission of Wild Rabbit Café is “to bring fresh, healthy food to the people of Flagler County at an affordable price point. Chef Laura knows “the only way to do that is to buy direct from the local farmers and make everything from scratch”.
In addition to an innovative plant-based salad, wrap, and soup menu, the café offers weekly gourmet vegan dinners highlighting local, seasonal produce sourced from these farms and also cooking classes highlighting produce available in current farmer CSA baskets.
