Claude's Chocolates

St Augustine is very fortunate to have such a talented chocolatier in its midst. Chef Claude Franques received his formal training in France and later moved to NYC to work in a perennial favorite restaurant with French traditional cooking at its best. It is here that he met his wife, Nicole. They have moved to the First Coast to pursue his dream of making artisan confections from the finest Belgian chocolate and freshest ingredients. Chef Claude’s specialty is his handmade truffles, now 30 different kinds, each a more delicious balance of flavors than the last. All his bonbons are made in small batches with the strictest standards of quality. He roasts his own nuts and makes his own caramel. Chef Claude even invented a datil pepper truffle for a special Slow Food First Coast dinner.

Two new bonbon flavors have been developed in collaboration with The St Augustine Distillery using their award winning rum and bourbon. In addition you may find some interesting flavors at The Ancient Olive in St. Augustine. Neighboring Georgia is the source of the pecans used in these treats as well.

Their entire line of exquisite barks and bars, satiny chocolate-covered ginger, pretzels, and fruits, to mention just a few of their delicious offerings, is a testament of the creative genius and amazing skill of a true artist. Please overindulge yourself at either of their two elegant locations.
